Coco Neera is the sap collected from the spadix (Flower) of the coconut tree, chilled and tetra-packed without preservatives. The collection method involves using a thermal ice box attached to the cut end of the spadix to collect sap instead of the traditional earthen pot. It is a novel method of collecting unfermented Coco Neera, preserving its flavor and aroma. The sap from the cut end of the spadix directly trickles down to a container with ice cubes placed around it, maintaining the internal temperature at 2 to 30֯ C. Tapping is done twice a day when, each time, a 1 to 2 mm spadix is sliced using a sharp knife.
COCO NEERA is stored in the freezer (-20֯ C) and remains fresh with no change in pH of around 7. Coco Neera is golden brown in color, sweet and delicious. The collected neera is non-alcoholic, fresh, and hygienic and is free from contamination by insects, ants, pollen, and dust particles.
COCO NEERA is collected and preserved using the method developed by CPCRI. It should be consumed within ½ an hour of opening because it is highly susceptible to natural fermentation at ambient temperature within a few hours due to natural yeasts in the air, and once fermented, it transforms into toddy.
